Pumpkin Pie with Grain Free Crust

Pumpkin Pie with Grain Free Crust is a great alternative for people who avoid traditional grain, especially wheat. When pumpkin pie is one of your favorite Holiday traditions, this pumpkin pie with grain free crust is a must have for your grain avoiding friends and family.

Ingredients

For the crust:

2 cups almond flour

2 tbs coconut flour

3 tbs high quality butter

2 tbs very cold water

For the filling:

15 oz can organic pumpkin

12 oz can organic evaporated milk

3/4 cup organic cane sugar

1/4 tsp salt

1 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp ground nutmeg

1/4 tsp ground clove

1/4 tsp allspice

Directions

Pre-heat the oven to 350F.

Grain free pie crust:

Place all ingredients in a food processor and pulse until the mixture begins to come together.  There are two ways to proceed with the pie crust. 1. Place the mixture into the pie plate and press together until the pie plate is evenly covered.  2. Turn the mixture onto a piece of parchment and shape into a disk.  Place another piece of parchment on top and roll out to desired thickness.  Remove the top piece of parchment.  Place the pie plate over the pie crust and flip the plate over.  Let the crust fall into the pie plate and make adjustments as necessary.  If you prefer a crispier crust, bake without filling for 10 minutes.  Cool slightly before filling for the second bake.

For the filling:

If your food processor is over 11 quarts, you can mix the pumpkin pie filling in it.  If your food processor is smaller than 11 quarts, use a large mixing bowl or stand mixer.  Mix all of the ingredients until smooth.  Pour into the cooled pie shell and bake for 35-45 minutes.  When the middle is still slightly jiggly, turn off the heat and let the pie sit in the oven for 10 minutes.  After 10 minutes, remove the pie from the oven and cool completely before serving.

 

 

Notes

Serving Suggestion – Add whipped cream and enjoy.
