Overnight monkey bread is an absolute must on holiday mornings in our house. The best part for the kids is having an ooey, gooey breakfast warm from the oven. The best part for me is prepping the night before with nothing to do in the morning but get breakfast out of the oven. I don’t know a mom out there that doesn’t appeal to.
1 tablespoon butter or oil to grease the baking pan
1 package 24 count frozen unbaked yeast rolls, you will only use 12 of them
½ cup butter melted
1 cup brown sugar
2 teaspoons cinnamon
2 tablespoons milk
1 small package cook and serve vanilla pudding
1 cup chopped nuts (optional)

Grease the 9×13 pan. Mix brown sugar, melted butter, cinnamon and milk together and pour into the pan. Sprinkle the vanilla pudding over the sugar mixture and place 12 of the rolls in the pan. Sprinkle in nuts if desired. Older versions of this recipe suggest that you cover and store on the counter or keep uncovered in the oven overnight. You can also store in the refrigerator overnight if you are worried about having food out all evening. In the morning, bake at 350 degrees for 30 minutes if the dish has been out all night. Otherwise, let the dough rise for at least one hour before placing in the oven to cook for 30-40 minutes. Let sit for a few minutes, then using oven mitts or potholders, place a platter on top of the pan and turn upside down quickly. Gently remove the pan and discard. The caramel is extremely hot and will burn so you will want to let the rolls cool and the caramel thicken.
Some people prefer to use a tube or bundt pan for this recipe. I think it’s the 9×13 pan spreads the caramel more evenly and is easier to assemble. Make sure that the platter you are flipping the rolls onto is larger than the pan you are baking them in so that the caramel sauce stays on the platter instead of running over the edge of the platter. As an added precaution, flip the casserole over a sink so that if the caramel drips, the cleanup is easier.
