How to make hot artichoke dip three delicious ways

Everyone thinks they have the best spinach artichoke dip but growing up with parents who didn’t like spinach, we had the best artichoke dip without spinach. 

Luckily for you, this one has a second version if you want to add the spinach and have the creamy version you know and love.

Artichoke Dip Ingredients

1 14 ounce can artichoke hearts, drained and finely minced

1 cup good quality mayonnaise (recommend Hellman’s or Duke’s)

1 cup Parmesan cheese, shredded

  • Artichoke hearts
  • Duke’s mayo
  • Shredded Parmesan

Tools

1 9×13 baking dish – can use a smaller or round baking dish but it will change the consistency and may require longer baking time.

Measuring cups

Strainer

Can opener

Rubber spatula or a spoon for mixing (rubber spatula works better) or use a food processor to speed up the job and be finished in minutes

If you are using a bowl for mixing, you will also need a knife and cutting board.

If you're a hand chopper at heart, the Kitchen Aid mixer will mix your ingredients smoothly without pulverizing them, unless that's what you prefer.

While baking is the preferred method for this dish, if you're transporting to a party, you can't beat a slow cooker to keep your dip warm and yummy.

If you avoid using your slow cooker because you detest cleaning it, here's your answer.

These liners take clean up time down to almost nothing. No soaking. No scrubbing, and best of all, they're BPA free.

Everyone needs a good set of measuring cups and spoons, and they're worth every penny.

Directions

Preheat the oven to 350F/176C.

Open the can of artichokes and pour them in to the strainer over the kitchen sink. 

Press out excess liquid with a paper towel. 

Either use the knife and cutting board to finely chop the artichokes and put them in a large bowl or put them in the food processor. 

Add the mayonnaise and Parmesan cheese and mix until well incorporated. 

Spread into the 9×13 baking dish and bake until golden brown on the edges. 

Serve with French baguette slices, regular crackers or for those avoiding grains, try Simple Mills Almond Flour Crackers.  They are amazing.

Artichoke Dip with Spinach

Use the above ingredients but add

1 8 ounce block of cream cheese, softened

Either – an additional 1/2 cup mayonnaise or a half cup of sour cream

1 teaspoon of garlic powder or 1 tablespoon/one clove of fresh minced garlic

8 ounces of chopped spinach, fresh and finely chopped or frozen spinach that is thawed and pressed with a paper towel to release most of the liquid.

8 ounces of mozzarella cheese (optional) This will add a creamier texture and give the dip it’s signature “pull”.

A 9×13 baking dish is the best size to use for this but you can still use the other sizes if that’s all you have.  Also because you have more ingredients, you may have to cook the mixture longer.

When you just have to have meat

One final variation for the meat lovers in the group is to add a small can of chicken to the mix before baking. 

The best thing about artichoke dip is that it tastes amazing with out without meat, with or without spinach and with or without the mozzarella cheese.  Use this recipe for an appetizer or a meatless meal. 

Add a salad and enjoy!
